Italian Sausage Deliciousness: Who Says Healthy Can't Be Yummy?

Just because something is healthy, it doesn't mean it can't also be rich and satisfying. Case in point: today's recipe. 

Who doesn't love some sausage and peppers in a zesty tomato sauce? A big bowl of it, with crusty garlic bread... Mmm, I'm in heaven. But who needs all that fat, right? I certainly don't. Which is why I have made this classically luscious dish into a heart-healthy, you-don't-need-to-go-running-tomorrow, it's-ok-to-eat-some-more mound of comforting deliciousness. Not to mention, it's really easy to make... 

April Showers Bring Italian Sausage and Pepper Stew:

1 (14 oz) can of diced tomatoes. Fresh tomatoes will do too, just chop 'em up. 

1/2 bag of frozen peppers and onions mix. Again, if you got fresh ones, dice away, but I find this easier. 

2-3 cloves of garlic, diced or grated

1 lb of Hot Italian Poultry Sausage. Chicken or turkey will do.

A few handfuls of baby spinach

The Winter Market at Horsefeathers, located at 346 Connecticut St. on Buffalo’s West Side, continues its successful run from 9 a.m. to 1 p.m. Saturdays through May 4. Entertaining guests this Saturday, April 13, will be Two of a Kind from 9:30 to 11 a.m. and Rob Falgiano from 11 a.m. to 12:30 p.m. 

The market offers a wide variety of local food vendors selling everything from bread, spices, cheese, coffee, biscotti, cupcakes, cookies and eggs to vegetables, fruits, pasta,  salsa, dumplings, meat and wine. Customers will also find homemade soaps, all-natural dog treats and much more.

Will this winter ever end?! I don' t know. What I do know is that if I have to walk around with cold wet socks again, I'm gonna scream. Yesterday was not a good day. The weather was awful, my shoes were soaked with icy water, and I just wanted to cry... until I came home and made this mountain of deliciousness. 

Nothing comforts me quicker than a warm, gooey apple dessert. With all the yumminess of a pie, but half the labor, this crumble requires very little prep work. You don't even have to peel the apples if you don't want to. I have a friend who actually likes the texture of the skins. To each his own. But I digress, apple crumble is an American classic, one that (if done right) can melt away your troubles and warm your hypothermic toes in a matter of minutes.

The food network taught me how to cook. Since I was a teenager, I'd watch pretty much every show they had on, learning how to dice and saute, how to emulsify and marinate, all from the comfort of my couch. I owe all those guys my love of cooking, and thanks to them, I've come up with some pretty awesome meals... if I do say so myself...

That brings me to this week's post. I got the original recipe from a certain food network lady, and then tweaked it a bit to fit my taste. It is the easiest, and most delicious roast I've ever made, for reals. Surprising, since it only has three ingredients. It just goes to show, simple is best, people! Simple, is best. Here we go.

Finger-licking, toe-tapping, best roast ever!  

3-4 lb chuck roast

3 medium onions, sliced

1/4 cup cider vinegar

salt & pepper

The Winter Market at Horsefeathers, located at 346 Connecticut St., continues its successful run on Buffalo’s West Side from 9 a.m. to 1 p.m. Saturday. Entertaining guests this Saturday, March 16, will be Dan & Leanne from 9:30 to 11 a.m., followed by Rob Falgiano from 11 a.m. to 12:30 p.m. 

Joining the market last Saturday was Go Veggies, Inc., a popular vendor at Western New York’s best farmers’ markets. Also participating in the Winter Market this Saturday will be the Wellness Institute of Greater Buffalo.

Crazy Yummy! Cookies 'N Cream Pudding

This is the yummiest dessert I've made in weeks, and super easy! I got the idea after eating some Southern Banana Pudding a friend made for a gathering. I loved the texture, the gooeyness of the pudding and the crunch of the cookies, with the sweetness of the banana... so good! 

After that I got to thinking about how much I love cookies 'n cream ice cream, and how simple it would be to combine the two ideas. What resulted was a chocolate lover's dream! I loved it so much, I'm gonna share it with all of you today. 

Cookies 'N Cream Pudding

2 pkg. (3.4 oz) Jell-O White Chocolate Instant Pudding 

3 cups cold milk (if you're using sugar-free pudding, add another 1/2 cup of milk, or it will be too thick)

1 cup semi-sweet chocolate chips

1/2 cup cream or milk

Entertaining guests this Saturday, March 9, will be singer/guitarist Casey Bolles from 9:30 to 11 a.m., followed by Ralph and Tamala Fonda (“Porcelain Train”) from 11 a.m. to 12:30 p.m.
